Denizli Kebap, also know as Kuyu Tandir, is a dish made from slowly roasting a sheep or goat in a well-shaped oven.

The tandir oven, is tug into the ground, and the walls are coated with stones. When a fire is made in the well, the stone walls become very hot, and when an animal is placed hanging inside, and the oven covered, the heat is trapped and slowly roasts the meat until tender and flavorful. The meat is often served at highway rest-stops, and comes with Denizli’s special burned-flavor yogurt and fresh hot flatbreads.
